Founded in Tampa, Florida, Bloomin' Brands owns Bonefish Grill, an American casual dining restaurant chain. Tim Curci and Chris Parker founded the company in St. Petersburg, Florida, on January 15, 2000. Bloomin' Brands acquired bonefish Grill in October 2001. There were three restaurants at the time. The 100th Bonefish Grill opened its doors in 2006. Bloomin' Brands owns 183 Bonefish Grill restaurants in 28 states, including five franchised restaurants. While most Bonefish Grill locations are only open for dinner, many are now offering weekend brunches, including omelets and other breakfast options. In some markets, the company is experimenting with lunch items that aren't available on the dinner menu.
